Crumbs-Delectable Pumpkin Crepes

Autumn is here, so it’s time to break out the pumpkin-flavored treats. These pumpkin crepes make for the perfect fall breakfast or lunch. Paired with its fluffy pumpkin cream filling and your fruit of choice, you will feel like you’re eating a high-class dessert! 

Ingredients: 

For the crepes: 

  • 1/4 cup pumpkin puree 
  • 3 eggs 
  • 2 tablespoons sugar 
  • 2 tablespoons melted butter 
  • 1 cup flour 
  • 1/2 cup milk 
  • 1/2 cup water 
  • 1 teaspoon vanilla extract 
  • 1 teaspoon cinnamon 
  • 1/2 teaspoon salt 

For the pumpkin filling: 

  • 4 oz cream cheese (softened) 
  • 4 oz whipped cream 
  • 1/2 cup pumpkin puree 
  • 2 tablespoons sugar 
  • 1/2 tsp cinnamon 

Instructions 

For the pumpkin crepes: 

  1. Add the pumpkin puree, eggs, sugar, butter, flour, milk, water, vanilla extract, cinnamon and salt to a bowl and mix until combined. 
  1. (Optional) Chill for one hour or overnight for an extra-smooth consistency. 
  1. Heat a medium-sized frying pan and spray with nonstick spray. Pour about ¼ cup of batter into pan and swirl the pan to coat evenly.  
  1. Cook until the edges brown and the crepe bubbles slightly, about one minute. Flip and cook for about 30 more seconds. Then remove from heat. 
  1. Add pumpkin filling, berries and any other topping and enjoy! 

For the pumpkin filling: 

  1. Mix cream cheese until smooth. 
  1. Add pumpkin puree, cinnamon and sugar and mix again. 
  1. Fold in whipped cream.
