Do you crave an easy, dorm-friendly treat? Look no further than these Chocolate Peanut Clusters. This two-ingredient recipe is extraordinarily simple and adaptable. The peanuts can be swapped for any nut and the chocolate (I used dark) can be swapped for milk, white or any other yummy flavor of melting wafer. The only appliance you need is a microwave!
Yield: Approximately 24 clusters
Ingredients:
- 2 cups unsalted peanuts
- 14 oz. melting wafers (Chocolate chips can be used. See additional note below)
- Note: If measuring isn’t your thing, you don’t have to follow the ingredient quantities. I included them for those who prefer clear directions, but I personally did not measure. This recipe does not require precision, which is what makes it so convenient. If you only want to make 6 clusters, it is easy to approximate. If you want to make two dozen, you can do so without difficulty.
Instructions:
- In a microwave-safe bowl, microwave chocolate in 30-second intervals. Stir in between intervals. This will speed up the melting and ensure your chocolate doesn’t burn or seize.
- Additional note: Chocolate can seize if not heated properly, meaning it will become clumpy and unusable. Chocolate chips are more prone to this than wafers. To avoid seizing, first microwave chocolate chips for 30 seconds, stir, then reduce time to 20 seconds for the rest of the melting process.
- Mix in peanuts. Stir until coated.
- Drop mixture by spoonful onto parchment paper-lined plate or tray
- Refrigerate for about 30 minutes until firm (Trust me, they’ll taste better).
