Crumbs- Jalapeno Popper Cucumbers

A fun and healthy alternative to eating a bag of chips

One of the most satisfying things about eating a bag of chips is the crunchy texture, but sometimes, eating an entire bag of chips isn’t the greatest idea. Alternatively, you could just eat an entire cucumber instead! This super easy cucumber snack has all the best parts of a jalapeno popper and that satisfying crunch of a bag of chips, but it’s much healthier for you!  

Ingredients: 

  • 1 English cucumber or 3-4 smaller cucumbers 
  • 1 jalapeno 
  • ½-1 cup whipped or softened cream cheese 
  • Ranch dressing 
  • ½ cup shredded medium cheddar cheese 
  • 3-4 strips of bacon 

Directions: 

  1. Start by cooking your bacon. Pan-fry it until it’s mostly crispy. 
  1. While your bacon cooks, slice your whole cucumber into evenly sliced pieces. Try not to make them too thick or too thin. 
  1. Dice up one jalapeno into small cubes. 
  1. Once your bacon is fully cooked, let it cool for a minute and chop it into small pieces. 
  1. Put all your diced/chopped ingredients into a container with a lid.  
  1. You can also use a large bowl, but using a container with a lid is typically easier. 
  1. Add ½-1 cups whipped or softened cream cheese. The amount you put in depends on how creamy you want your cucumbers. 
  1. Add ½ cup shredded medium cheddar cheese and a dash of ranch dressing. 
  1. Put the lid tightly onto the container and shake it until all your ingredients are fully combined. 
  1. Once you’re done shaking the container, open it up and enjoy your crunchy and creamy snack!
