Crumbs: Blackberry Crumble Bars

Easy and sweet summer treat

Savor the last few weeks of summer with these quick and easy blackberry crumble bars. They are easy to whip up and make for a perfect snack or simple dessert when served with ice cream. The perfect way to make the most of one of the most delicious summer berries while they’re still in season.

Ingredients:

  • 3 cups flour
  • 1 cup butter (cut into small pieces)
  • 1 cup sugar
  • ½ tsp. salt
  • 1 tsp. baking powder
  • 1 egg
  • 4 cups blackberries
  • 1 tbsp. lemon juice
  • 1 tbsp. cornstarch
  • ¾ cup sugar (for filling)

Directions:

1. Stir together flour, sugar, baking powder and salt. Cut in the butter using a fork until butter is in pea-sized pieces.

2. Stir in egg and mix until well combined. Press half the dough into the bottom of a 9×13 baking pan.

3. Mix together blackberries, lemon juice, cornstarch and ¾ cups sugar. Pour berry mixture into the pan.

4. Sprinkle the berries with the other half of the dough mixture and bake at 375 degrees for 30 minutes.

5. Let cool before slicing into even squares and serving. Enjoy!
