These fluffy, cake-like cookies, with a melt-in-your-mouth maple and brown sugar frosting, are sure to be a hit with family and friends this holiday season. This recipe makes a very large batch, making them perfect for sharing.
Ingredients:
- 2 cups softened butter
- 2 cups granulated sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp cinnamon
- 2 tsp allspice (or pumpkin pie spice)
- 1 tsp salt
- 2 eggs
- 2 ½ tsp vanilla
- 2 cups canned pumpkin
- 4 cups flour
Frosting:
- 1/2 cup butter
- 1/2 cup brown sugar
- ¼ cup milk
- 1 tsp vanilla
- 3 tbsp maple syrup
- 4 cups powdered sugar
- Ground cinnamon to sprinkle as garnish
Directions:
1. In a medium-sized mixing bowl, combine flour, baking powder, baking soda, salt, spices and mix well.
2. In a separate bowl beat butter and sugar with mixer until fluffy. Add eggs and vanilla, mixing well before adding dry ingredients and pumpkin.
3. Form dough into small balls before placing on cookie sheet and baking at 350 degrees for 10 to 12 minutes.
4. For the frosting, melt butter and brown sugar together in microwave, or on stovetop, until smooth. Add milk, vanilla and maple syrup, stirring well before beating in powder sugar with a mixer until the desired constancy has been reached.
5. Once all cookies have been baked and cooled, frost and sprinkle with cinnamon. Enjoy!
