Kick off the semester right with this 30-minute meal that will fuel your take-out cravings without breaking the bank. This recipe uses top-ramen noodles as a cheap and easy substitute for traditional stir fry noodles, and if needed, the sauce can be substituted with storebought teriyaki sauce to make this recipe even easier.
Ingredients:
Sauce:
¼ cup soy sauce
1 tbsp cornstarch
½ cup chicken stock
1 tbsp rice vinegar
2 tbsp brown sugar
3 cloves garlic (minced)
Stir-Fry:
2 ramen packets (noodles only)
2 chicken breasts
8 oz frozen or fresh broccoli (or other vegetables)
Salt, pepper and desired seasonings to taste
Directions:
- To make the sauce, mix soy sauce and cornstarch. Then add rice vinegar, chicken stock, minced garlic and brown sugar. Whisk until evenly mixed.
- Chop chicken into bite-sized pieces and then toss with salt and pepper. Sauté over medium-high heat until fully cooked.
- Set chicken aside and cook vegetables until soft.
- Add ramen noodles to boiling water and cook until tender.
- Combine chicken, vegetables and noodles in pan with sauce and mix until sauce has coated all ingredients.
- Serve and enjoy!
