If midterms have you stressed to the bone, and maybe you’ve been forgetting to feed yourself, here is your friendly reminder that you need to consume something other than a Redbull. You can whip up these tuna cakes in no time.

Ingredients:
One can of tuna
One potato
One egg
½ cup of bread crumbs
One tablespoon of mayonnaise
One tablespoon of mustard
¼ cup of shredded parmesan
Sprinkle of garlic powder
Salt and pepper to taste
Olive oil
Directions:
- Preheat oven to 425 degrees.
- Cut potato into desired size of wedges.
- Lay out wedges on a parchment paper covered baking sheet.
- Cover in olive oil, garlic powder, onion powder and salt and pepper.
- Place in oven for 15 minutes.
- Place a large pan on medium heat. Add olive oil to pan.
- Add egg, bread crumbs and parmesan in a bowl and mix.
- Drain can of tuna and add to mixture, along with mayonnaise, mustard, garlic powder, onion powder and salt and pepper. Mix until thoroughly combined.
- Take spoonfuls of tuna mixture and mold into palm-sized patties.
- Add to pan and cook, flipping every few minutes until browned on both sides.
- After 15 minutes of baking, flip potato wedges to other side.
- Add onion powder, garlic powder and salt and pepper and place back in the oven for another 15 minutes.
- Serve and enjoy.
