Crumbs: Chow mein for four

Don’t order out when you can make it at home

Crunchy chow mein | Emily Pearce

There’s a few recipes my roommate and I have mastered, and chow mein is one of them. This easy to make dish yields leftovers no matter the crowd and is delicious both hot and cold.  

Prep time: 20 minutes  

Yield: 4 servings  

Ingredients: 

Onion  

4 cloves garlic 

2 stocks of chives  

2 carrots 

2 stocks of celery 

1 ½ cup cabbage  

2 tbs soy sauce 

2 tbs sugar 

4 mushrooms  

1 cup water  

1 cup bean sprouts 

2 cups dried chow mein 

2 tbs olive oil 

Paprika 

Black pepper 

Chili powder  

2 chicken breasts  

Directions: 

Mix sugar, water, soy sauce with seasonings and set to side 

Slice thawed chicken breast into strips and set to the side  

Slice and dice veggies and put in a large mixing bowl to set aside 

Take a large pot or wok, add oil and heat until oil shimmers  

Stir fry chicken until cooked   

Add veggies and stir until tender 

Add seasoning taste and beansprouts  

Serve in bowl over dry chow mein noodles
