Ingredients:
1 lb. chicken breast
5 garlic cloves
1 onion
1 lb. noodles
1 zucchini
1/4 teaspoon salt
1/4 teaspoon pepper
Chives
2 tbs sesame oil
Chicken stock
Directions:
- Roughly chop an onion and peel garlic cloves.
- In a large pot add water, chicken breast, garlic and onion. Bring to a boil and cook until chicken is cooked through.
- Thinly slice zucchini into strips, mix with salt and let sit for 10 minutes.
- In a separate pan, add sesame oil and fry zucchini until soft.
- Strain chicken, onion and garlic from water.
- In a separate bowl, mash garlic, 1 tbs sesame oil and pepper.
- Separate chicken with two forks into strips.
- Boil noodles in chicken stock until al dente.
- Add chicken, zucchini and mashed garlic into the pot and incorporate.
- Thinly slice chives and add as a garnish.
- Serve while warm or store in the fridge for up to three days.
