Crumbs: one pot fried rice

This week's recipe is easy for college students

Cooking on a busy schedule can be difficult and some days it’s easier to call in take-out. A  meal college students are familiar with, fried rice, can be made at home in the time it would take to deliver. Here is how to make easy one pot fried rice, a filling and cheap meal.  

Serving size: three servings 

Cook time: 30 minutes  

Ingredients

1 cup white rice 

1 cup frozen veggies 

2 cups water or broth 

2 eggs 

2 tablespoons vegetable oil 

2 tablespoons soy sauce 

Salt  

Directions: 

  1. Add rice to a small bowl and rinse with water until it runs clear.  
  1. In a medium sized pot, add vegetable oil and washed rice. Sauté until golden brown. 
  1. Slowly add in water or broth to the pot and cover. 
  1. Cook rice undisturbed for 15 to17 minutes. 
  1. Fluff rice with a fork. 
  1. Mix in frozen veggies and let sit on low heat for five minutes. 
  1. Move rice to one side and scramble eggs. 
  1. Mix rice with eggs and add seasonings.
