What is Thanksgiving without the mashed potatoes? My Dad has been in charge of making our family’s mashed potatoes for years because he always manages to find the right combination of cheese, milk and potatoes to make a delightfully creamy dish. This is my attempt to recreate his recipe.

Servings: 4+
Ingredients:
- 6 medium potatoes
- 1 cup Velveeta cheddar cheese (shredded)
- 3/4 cup milk
- 1/4 cup butter
- 1/4 cup sour cream
- 3 green onions
- Water for boiling

Directions:
- Wash each potato and slice in half
- Place potatoes in a pot and fill with just enough water to cover the potatoes
- Bring water to a boil
- Reduce heat, cover and simmer potatoes for 20 minutes
- Drain potatoes and mash
- Heat milk in the microwave for a minute and a half in 30-second intervals
- Heat butter in microwave for one minute
- Wash green onions and chop into small pieces
- Add cheese, milk, butter, sour cream and green onions and mix well
- Serve and enjoy
