During the holidays, it can be stressful to cook small meals for yourself in between all of the large family gatherings that entail endless bouts in the kitchen. Here is a simple recipe for when lunch deserves just a smidgen of effort.
Ingredients:
- Can of 8 refrigerated biscuits
- 1/2-cup alfredo pasta sauce
- 1 cup shredded mozzarella cheese
- 1 small rotisserie chicken
- 1 cup baby spinach
Directions:
- Preheat oven to 375 degrees Fahrenheit
- Place biscuits on baking sheet giving them enough room to expand
- Evenly spread dollops of sauce on each biscuit
- Pull apart chicken and put shredded pieces on saucy biscuits as heavily as desired
- Sprinkle generous amount of mozzarella over chicken
- Place spinach leaves sporadically over biscuits keeping in mind that the leaves will shrink
- Bake for 13-15 minutes or until biscuits are golden brown
- Let cool and enjoy
