These little cookie bites are perfect for fall. They are soft and barely expand on the cookie sheet – almost reminiscent of mini muffins. Make them when you need a cookie fix but want to try something new.
Ingredients:
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 2 1/2 cups flour
- 1 1/4 cups granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup butter
- 1 egg
- 1 cup pumpkin
- 1 cup confectioner’s sugar
Directions:
- Preheat oven to 350 degrees Fahrenheit
- Spray cookie sheet with non-stick cooking spray
- Mix all dry ingredients (except the granulated and confectioner’s sugar) in a bowl
- In another bowl, mix granulated sugar, butter, pumpkin, egg and vanilla – in that order – until ingredients are thoroughly combined
- Add dry mixture to wet mixture and stir until batter is thick
- Pour confectioner’s sugar in a different bowl
- Roll batter into small balls and roll the balls in the sugar until thoroughly coated
- Place batter balls on cookie sheet
- Bake for 6-8 minutes
- Let cool before enjoying
