Claire Whitley | Crumbs
This recipe was one of my favorites when I was young, and I would beg my mom to make this nearly every Saturday or Sunday morning. Eventually, she showed me the recipe and helped me make my first one while I was in middle school. While I have the recipe, I still prefer to make it only on particularly calm weekend mornings. It makes it all the more special to share over a warm cup of tea, coffee, hot chocolate or cider.
Ingredients
Streusel:
- 1/3 cup brown sugar
- 1/4 cup flour
- 1/2 teaspoon ground cinnamon
- 3 tablespoons firm butter
Batter:
- 2 cups flour
- 1 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup butter, softened
- 1 cup milk
- 1 egg
- 1/2 teaspoon vanilla
Directions:
- Heat oven to 350 degrees Fahrenheit
- Grease a 13×9 inch or 9×9 inch baking pan
- Prepare streusel by mixing all ingredients until crumbly
- Beat remaining ingredients in a large bowl, scraping the sides down occasionally
- Spread half of the batter in the bottom of the pan
- Sprinkle with half of the streusel
- Top with remaining batter and streusel
- Bake 35-40 minutes
- Best served warm with coffee or tea
