With beef becoming increasingly expensive and chicken coming in handy flash frozen bags, it is easy to get stuck in a chicken rut. This recipe adds a little flare to a typical chicken dinner and all together it takes less than 30 minutes to make. Nachos are easy, breezy, beautiful and absolutely delicious.

Ingredients:
- 1 tablespoon vegetable oil
- 1 pound chicken breast, cut into bite-sized pieces
- 1 packet of taco seasoning mix (or make your own)
- 8 ounces tomato sauce
- 1 medium bell pepper, chopped
- 15 ounces canned black beans, drained
- 7 ounces canned sweet corn, drained
- 2 cups shredded Mexican cheese blend
- Tortilla chips
- Green onions (optional)
- Salsa (optional)
- Jalapeños (optional)
Directions:
- In a 12-inch skillet, heat oil over medium-high heat
- Cook chicken 3-5 minutes until no longer pink in center
- Stir in taco seasoning, tomato sauce, bell pepper, beans, corn and one cup of cheese
- Reduce heat to medium and cook 3-5 minutes until heated through and cheese is melted
- Put tortilla chips on a plate and spoon mixture over them
- Top with favorite taco toppings and eat up
