My favorite ice cream has always been mint chocolate chip. It was one of those things my dad and I always shared together. While perusing an old cookbook on my shelf, I came across this recipe for mint chocolate chip cookies. To create a mintier look, add a little bit of green food coloring to the dough prior to putting the chocolate chips in.
Ingredients:
- 2 1/4 cups all-purpose flour
- 3/4 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup butter or margarine, softened
- 1/2 cup shortening
- 1 egg
- 1/2 teaspoon mint extract
- 1 cup mint chocolate chips
Directions:
- Preheat oven to 350 degrees Fahrenheit
- In a large bowl, cream the butter, shortening and sugar until light and fluffy
- Add egg and mint, mix well
- In separate bowl combine flour, baking powder and baking soda
- Gradually add to creamed mixture
- Mix in the chocolate chips
- Shape into 1-inch balls and place on a foil lined baking sheet
- Cook for 8-10 minutes, or until bottoms are golden brown
- Cool and enjoy
