A great dish for lentil lovers. Try this soup on a hot or a cold day.

Ingredients:

  • 3/4 pounds chorizo
  • 2 bay leaves
  • 3/4 cup lentils
  • 1 onion
  • 1 clove garlic
  • 2 stalks celery
  • 1 tablespoon tomato paste
  • 1 24-ounce can of diced tomatoes
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 32 ounces chicken or vegetable broth
  • Cauliflower to taste
  • Salt, red and black pepper to taste

Directions:

  1. Cook chorizo in pot, remove when done
  2. Sautee onion and garlic and celery and cauliflower
  3. Add bay leaf, cook lentils with vegetables using broth
  4. Add ginger, cumin, paprika, tomatoes, salt, pepper and tomato paste
  5. Reduce to desired thickness and add chorizo
