A great dish for lentil lovers. Try this soup on a hot or a cold day.
Ingredients:
- 3/4 pounds chorizo
- 2 bay leaves
- 3/4 cup lentils
- 1 onion
- 1 clove garlic
- 2 stalks celery
- 1 tablespoon tomato paste
- 1 24-ounce can of diced tomatoes
- 1 teaspoon ground ginger
- 1 teaspoon cumin
- 2 teaspoons paprika
- 32 ounces chicken or vegetable broth
- Cauliflower to taste
- Salt, red and black pepper to taste
Directions:
- Cook chorizo in pot, remove when done
- Sautee onion and garlic and celery and cauliflower
- Add bay leaf, cook lentils with vegetables using broth
- Add ginger, cumin, paprika, tomatoes, salt, pepper and tomato paste
- Reduce to desired thickness and add chorizo
