Being bored by your breakfast often leads to skipping breakfast. A quick easy way to mix it up is using your favorite hot cereal, in this case Malt-o meal or cream of wheat, and turning them into muffins. This recipe is bound to work with oatmeal, too. Add a variety of other goodies like blueberries and make breakfast fun.
Ingredients
- 1 1/4 cups flour
- 3/4 cup Malt-o meal
- 1/2 cup sugar
- 3/4 cup of milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon cinnamon (optional)
Directions
- Preheat oven to 400 degrees Fahrenheit
- In large mixing bowl, combine all ingredients
- Stir together until all ingredients are moistened
- Pour batter into greased or paper lined muffin pans, filling on 3/4 full
- Bake 18 to 20 minutes until center is firm to the touch
