Silas Whitley | Crumbs
This is a quick alternative to split pea soup, with a Thai twist. It is fresh and healthy, too.
Ingredients:
- Oil
- 1 can coconut milk
- Zest of one lime
- 1.5 inches of gingerroot
- 1 small shallot, sliced
- 1 serrano pepper, diced and seeded
- 1 garlic clove
- 2 pounds frozen peas
- Basil sprigs
- Chicken or beef bouillon cube
Directions:
- Sautee shallot, garlic, lime zest and serrano pepper in a large pot
- Add two cups water, bouillon cube and 1.5 pounds frozen peas
- Add a few basil leaves
- Add two cups water after sautéed
- Soften peas, then blend in a food processor or other appliance
- Return to pot and bring to boil
- Add remaining peas and 1/2 can coconut milk
- Top with basil and salt or pepper to taste
