This is a quick alternative to split pea soup, with a Thai twist. It is fresh and healthy, too.

Ingredients:

  • Oil
  • 1 can coconut milk
  • Zest of one lime
  • 1.5 inches of gingerroot
  • 1 small shallot, sliced
  • 1 serrano pepper, diced and seeded
  • 1 garlic clove
  • 2 pounds frozen peas
  • Basil sprigs
  • Chicken or beef bouillon cube

Directions:

  1. Sautee shallot, garlic, lime zest and serrano pepper in a large pot
  2. Add two cups water, bouillon cube and 1.5 pounds frozen peas
  3. Add a few basil leaves
  4. Add two cups water after sautéed
  5. Soften peas, then blend in a food processor or other appliance
  6. Return to pot and bring to boil
  7. Add remaining peas and 1/2 can coconut milk
  8. Top with basil and salt or pepper to taste
