The kitchen cupboard is the perfect recipe for people looking for a good meal with just the basics in their cupboard. This recipe tastes great, is easy to make and leaves few dirty dishes to wash afterward.
Ingredients:
- 1 cup white rice
- 2 cups water
- 2 small chicken breasts, cut into bite-sized pieces
- 1/4 cup enchilada sauce
- 1 15 ounce can of black beans, drained
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1 teaspoon garlic
- 1 1/2 teaspoon chili powder
- 1 1/2 teaspoon onion powder
- 1 teaspoon vegetable oil
- 1/2 cup shredded cheese
Directions:
- Combine rice and water in a quart-sized pan
- Boil, then lower temperature to low and let cook 20 minutes
- In frying pan, heat oil over medium heat
- Add chicken and all seasonings
- Let cook through
- Add enchilada sauce and black beans
- Heat through stirring occasionally
- After rice is done, combine it with the chicken and bean mixture in the frying pan
- Turn oven to broil at about 400 degrees Fahrenheit
- Top mixture with cheese
- Place in oven and bake for five minutes, or until cheese is melted
- Serve warm
