I went home for winter break and was introduced to this great recipe. This recipe for mac and cheese is far superior to the kinds in a box and to make it healthier simply substitute in whole-wheat macaroni noodles.
Ingredients:
11/2 cups elbow macaroni
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1 3/4 cup of milk
1 cup shredded cheddar
1 cup diced ham
Direction
- Preheat oven to 375 degrees Fahrenheit.
- Cook macaroni as directed on the package.
- In a medium sauce pan, cook and stir butter, salt and pepper on medium heat until butter is melted.
- Mix in flour.
- Cook over low heat stirring constantly until mixture is smooth and bubbly.
- Remove from heat and stir in milk.
- Heat to boiling while stirring constantly.
- Let boil for 1 minute then remove from heat.
- Stir in cheese until melted.
- Stir ham into cheese sauce.
- Place macaroni in ungreased 11/2 quart casserole pan.
- Stir cheese sauce into macaroni.
- Cook uncovered for 30 minutes.
