This meal is good for anybody who is looking to eat a healthy vegetarian meal that has high protein.
The heart-shaped bell pepper will easily serve one person and fill you up without the greasy feeling of eating a high protein meal. Not only the quinoa stuffed bell peppers are easy to make, but also they look beautiful when done. If you are planning on impressing your Valentine, this recipe might do it well.
Ingredients:
- 1 cup cooked quinoa
- 1 jalapeno pepper, chopped
- ½ can corn kernels
- ½ can black beans, drained
- ½ cup shredded pepper jack cheese
- ¼ cup parmesan cheese
- 2 bell peppers, hollowed out
- 1 tablespoon cilantro
Directions:
- Preheat oven to 350 degrees F.
- In a bowl, mix quinoa, jalapeno, corn, beans and melted cheese.
- Spoon the mixture into hollowed out peppers. Top with cilantro leaves.
- Place them on a baking sheet and bake for about 15-25 minutes or until the peppers are tender.
- Serve and eat immediately.
