Running low on food in the fridge comes often at college. I end up throwing random things from fridge together frequently. My roommate said she came across this recipe on Pinterest and I decided to try it out because I love eggs and I love avocado.
Ingredients
- 1 to 2 avocados
- 1 egg
- salt and pepper
Directions
- Heat oven or toaster oven at 350 degree F.
- Lightly scramble an egg.
- Slice avocado in half and remove the seed. Scoop out some of the avocado to make a deeper, wider hole for the egg. Leave the peel on the avocado.
- Pour the egg evenly among the avocados.
- Bake for 10-15 minutes or until egg is cooked.
- Season with salt and pepper as desired.
