These energy bars can be eaten at room temperature, but store best in the fridge. Enjoy a couple for a quick breakfast or post-workout snack or to replace that pricey granola bar!

Ingredients

  • ¼ cup peanut butter
  • ¼ cup honey or agave nectar
  • 1 cup dry rolled oats
  • ½ cup sliced nuts & ground seeds (sliced almonds, flax meal, chia seeds)
  • 2 tablespoon mini chocolate chips
  • ¼ cup ground unsweetened coconut flakes

Directions

  1. Melt peanut butter and honey or agave nectar in the microwave for 30 seconds.
  2. Stir, and add oats, nuts or seeds, and chocolate chips.
  3. Mix well with a spoon. Once the mixture is sticking together, use your hands to form 12 quarter-size balls.
  4. Roll in coconut flakes to avoid sticking.
