Here’s a quick, easy and nutritious recipe. Whip it up for lunch or a refreshing side dish.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup frozen corn
- 1/2 cup sliced olives
- 1 diced tomato
- 1/2 teaspoon salt
- 1 half of a lime
Directions
- Bring water and quinoa to a boil, turn down heat and simmer with lid for 15-20 minutes (until quinoa is tender and has absorbed the water).
- Meanwhile chop olives and tomato.
- When quinoa is done, add vegetables, salt and squeeze the lime over the top.
- Note: use the salt and lime according to your taste. I like a strong lime flavor so the amount of lime that I call for may be a bit much for some tastes.
- Mix together and cool.
- Serve cold, separately or on a bed of greens.
