Here’s a quick, easy and nutritious recipe. Whip it up for lunch or a refreshing side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup frozen corn
  • 1/2 cup sliced olives
  • 1 diced tomato
  • 1/2 teaspoon salt
  • 1 half of a lime

Directions

  1. Bring water and quinoa to a boil, turn down heat and simmer with lid for 15-20 minutes (until quinoa is tender and has absorbed the water).
  2. Meanwhile chop olives and tomato.
  3. When quinoa is done, add vegetables, salt and squeeze the lime over the top.
  4. Note: use the salt and lime according to your taste. I like a strong lime flavor so the amount of lime that I call for may be a bit much for some tastes.
  5. Mix together and cool.
  6. Serve cold, separately or on a bed of greens.
