Sometimes all we need is chocolate, chocolate and … more chocolate. These cookies fulfill any chocolate lover’s dream. Plus, if you’re vegan or dairy-free, this recipe is for you.
Ingredients
- 1/2 cup milk (soy, dairy, almond or otherwise)
- 2 tbsp ground flax seeds
- 1/2 cup canola oil
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 tsp vanilla
- 1 1/2 cup flour
- 1/2 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 3/4 cup chocolate chips
Directions
- Preheat oven to 350 degrees and line two baking sheets with aluminum foil.
- In a large bowl, mix milk, flax, oil, sugars and vanilla until smooth.
- Stir in remaining ingredients, sans chocolate chips, until a dough forms.
- Finally, add the chocolate chips. Roll the dough into 2-inch balls and place on cookie sheet.
- Bake for 10 minutes.
- Hint: They will look and feel too soft, but the cookies will firm after 10 to 15 minutes of cooling.
