Emily Vaartstra | Crumbs
Peanut butter is a popular comfort food for college students, and it is a great flavor to doctor up a simple dish. This recipe has few ingredients so it is low cost, and it beats opening up a can of Campbell’s soup on a Tuesday night. Peanut butter chicken only takes 5-10 minutes to make, which leaves plenty of time to write that 10 page paper and still enjoy a yummy meal.
Ingredients
- 1 chicken breast (or canned chicken breast)
- 1/4 cup of onion (diced)
- 1/4 cup of peanut butter (chunky is best)
- 8 Ritz crackers (crushed)
Directions
- Fry onions and chicken breast until fully caramelized and cooked.
- Add peanut butter and mix until chicken is coated, then combine the crackers.
- For extra crunch, chop up peanuts or almonds and add it to the chicken.
- If you are using canned chicken breast, drain the chicken and add it to the pan after the onions are already caramelized.
- Whip up some mashed potatoes and throw in some corn to make it a meal.
Good for an individual serving.
