Gourmet Grilled Cheese

Grilled cheese is the ultimate comfort food, but that doesn’t mean it can’t be saved for a sunny day, too. With these easy steps you can spice up your grilled cheese to make it a fun date night dinner, or snack for that pre-game get-together at your apartment.

Whether you’re homesick, it’s a gloomy day or you’re fighting with your significant other, grilled cheese is the ultimate comfort food. But that doesn’t mean it can’t be saved for a sunny day, too. With these easy steps you can spice up your grilled cheese to make it a fun date night dinner, or snack for that pre-game get-together at your apartment.

Ingredients

  • 2 slices of bread — Dave’s Killer Nuts & Grains bread makes an incredible grilled cheese, but tends to be on the pricey side. Something cheaper and easier to find works too.
  • Enough butter or margarine to cover one side of each piece of bread — from corner to corner, of course.
  • 2 slices of Swiss cheese, or your personal favorite. Pepper jack is great for an extra kick. Avoid grated cheese — it makes for one messy stovetop.
  • Half an avocado, thinly sliced.
  • Half a tomato, thinly sliced.

Put it together

  1. Pre-heat a skillet on medium.
  2. Butter one side of each slice of bread.
  3. Put the first piece of bread on the skillet, butter side down. Top it with cheese.
  4. Let the cheese melt a bit; add the avocado and tomato slices. Put the second piece of bread on top, butter side up.
  5. Flip back and forth (using a spatula — or try holding the skillet away from the stove and flipping it without any utensils, if you’re feeling adventurous) until the sandwich’s crispiness meets your personal standards.
  6. If you’re sharing with one, cut it in half. Two or more? Cut it into fourths for the perfect finger food.
  7. Pair with a side of Organic’s brand tomato basil bisque, topped with extra basil.
  8. Don’t forget the beer. I like Breckinridge Brewery’s vanilla porter. The blend of chocolate, roasted nut and vanilla go nicely with grilled cheese, but just about any will do. Try to treat yourself to something a little classier than Keystone though, OK?

Yields one grilled cheese sandwich.
