Pies require relatively few ingredients. What better way to make a new apartment feel like home?

After moving into my first apartment I made a wonderful discovery:  an apple tree, fully laden with fruit just waiting to be picked. The apples are not the best for eating fresh, but my roommates and I decided they could make some wonderful pie.

An added bonus: pies require relatively few ingredients. What better way to make a new apartment feel like home?

 

Crust

Ingredients

  • 2 1/2 cups flour
  • 2 sticks cold butter
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6 to 8 tablespoons ice water

Instructions

  1. Mix flour, salt and sugar in bowl.
  2.  Cut butter into smaller chunks and add to dry ingredients.
  3. Add water and mix until dough holds together in a ball.
  4. Wrap dough in plastic wrap and chill. You want it to stay cold so the butter doesn’t melt and mix into the dough.  Ideally, it will stay in this mixture in pea-sized chunks. When the pie cooks, it will melt and cause the dough to be flaky and delicious. While the dough is chilling, mix the filling.

Apple Pie Filling

Ingredients

  • Chopped apples (enough to fill pie tin)
  • 2 or more tablespoons flour
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Instructions

  1. Mix up the above ingredients in a bowl and set aside.

Put it all together

  1. When you have the filling ready to go, take the dough out of the oven and cut in half.
  2. Roll one half out flat and then lay into a pie tin.
  3. Add filling mixture.
  4. Roll out the rest of the dough and cut some sort of vent (you can get creative with the pattern) and place on top of the pie.
  5. Pinch around the edges to remove excess dough.
  6. Bake at 425 degrees Fahrenheit for 45-60 minutes until crust is golden brown.

For another sweet treat: Lay leftover dough pieces on a pan, sprinkle with cinnamon and sugar and bake for about 20 minutes or until golden brown.
