I’m one of those people that lusts after the sweet, spicy and smooth flavor of pumpkin pie year-round — why save it for the holidays? This single-serving recipe is the perfect solution to any pumpkin pie-craving. Just grab your favorite coffee mug and a spoon, and you’re good to go.
Ingredients
7 ounces light vanilla soymilk
2 tablespoons canned pure pumpkin
¼ teaspoon cornstarch
¼ teaspoon pumpkin pie spice
¼ teaspoon vanilla extract
Sugar, to taste
Whipped Cream (optional)
Directions
Combine all ingredients, except the sugar, in a small pot. Bring to a boil, stirring constantly.
Once the mixture begins to get frothy, continue to boil for 1 minute. Remove the pot from the stove and pour into the coffee mug.
Allow the mixture to cool a bit.
Add a touch of sugar, as much as you’d like.
You can always add a bit of whipped cream, too, for extra indulgence
